Fats and oils are essential in a healthy diet but we are told that fat causes heart deseases and we must reduce our consumption of fats.This has led to lower fat
consumption but degenerative diseases and obesity are still on increase.
About sixty years ago engineered fats and oils were introduced into our food chain.
This introduction saw the start of degenerative deseases apidemic.We had been using natural vegetable/animal fats and oils. Animal fat is not healthy but our bodies can metabolize this fat if it has good supply of daily essential fatty acids.
Unsaturated fish oils are very good source of these EFAs including EPA and DHA,.
We consume large amounts of animal fat and engineered vegetable fats and oils and do not include essential fatty acids.This undermines the body's ability to metabolize these engineered vegetable and animal fats.The result is degenerative diseases and obesity.
It is the type of fats and oils we consume and not the amount which causes
degenerative diseases and obesity.This started with the introduction of engineered fats and oils.With failure of our ability to metabolize fats including carbohydrates,our bodies naturaly go into emergency compesatory mode when we eat which leads to self destruct.This self destruct is seen in hundreds of diseases symptoms.During this process, the endocrine system is disrupted triggering Diabetes.
Engineered fats are the root of this problem.Transfats and other toxic isomers in our engineered fats and oils are known to damage our cellular membranes,interfere with cellular respiration,inhibit glucose transport,set in motion consequences that corrode our arteries,damage our eyesight,devastate our kidneys,destroy our venous system and causing multiple similar symptoms.
When unsaturated fatty acids come out of refining of hydrogeneration process during engineering of fats and oils,the Cis geometry in the molecule structure is destroyed.It is this Cis geometry that enables us to properly metabolize fats and carbohydrates.
It is also the cause of natural fats going rancid at room temperature.The destruction of the Cis geometry enables retailers to keep these fats on grocery shelfs at room temperature for long without the fats and oils going bad.
Trans configuration of the unsaturated oils unlike the Cis has straight line geometry that does not operate with our body enzyme system.It is similar but not identical to saturated fatty acids.When the body lacks essential fatty acids, it utilises the unsaturated fats and oils to repair cell membranes as well as storing them as fats.When used for membrane repair, it causes the cells in our bodies to become stiff and sticky.This inhibits glucose transport and triggers Type -2 Diabetes.
